Greens

Ingredients:

2ham hocks
1gallon bag turnip greens
1gallon bag mustard greens
1or 2 small turnips (optional)
salt & pepper

Rinse the ham hocks, and place them in an 8‑quart pot with 1½‑inches of water. Bring to a boil, reduce heat, cover and simmer for an hour. Soak and wash the greens. Peel and dice the turnips (if desired).

Remove ham hocks. Stuff the greens and turnips into the pot. Pick meat from the ham hocks and add back to the pot. (Discard the rest.) Salt and pepper greens to taste. Cover and simmer about 2 hours until tender. Serve with pepper vinegar.
