Tesfa’s Pork Ribs
featuring Tesfa Wondemagegnehu’s Dry Rib Rub
Ingredients:
| ¾ | cup dark brown sugar |
| 2 | tablespoons Lawry’s Seasoned Salt |
| 1 | tablespoon (heavy) garlic powder |
| 1 | tablespoon (heavy) onion powder |
| 1 | tablespoon black pepper |
| 1 | tablespoon lemon pepper |
| 1 | tablespoon smoked paprika |
| 1 | tablespoon regular paprika |
| 1 | tablespoon (light) ground mustard |
| 1 | teaspoon cinnamon |
| 1 | teaspoon (light) cayenne pepper |
| ½ | teaspoon chili powder |
In a food processor, pulse together all the ingredients to remove any seasoning chunks.
Brine rib slabs, then dry. Apply rub generously at least 8 hours before smoking.
